Sweet Holiday Cocktail: VOVETI Raspberry Champagne Float

Every year I like to create a new holiday cocktail for my annual Christmas soiree, and this year’s may be the most delicious yet! It’s called a Raspberry Champagne Float, and it’s exactly like it sounds– an adult vanilla float with raspberries. I got the idea from a fabulous book I picked up at the Camden Book Fair called Fabulous Fizz by Alice King, which includes dozens of delicious, lesser-known champagne cocktails. You can use whatever sparkling wine you’d like, but I opted for my new favorite, VOVETI. VOVETI is a chic, modern Italian prosecco that embodies affordable luxury and classic style, so it was a perfect candidate for this holiday cocktail. It’s both upscale and affordable, making it the perfect prosecco for everyday pairing or chic entertaining with friends.

I’m flying down to Florida to be with my family and friends for Christmas, and I can’t wait to serve up (and later consume) some of these bubbly delights. All you need to make a Raspberry Champagne Float is a bottle of VOVETI, champagne flutes, some fresh raspberries, and vanilla ice cream. This cocktail can be served for either Christmas or New Year’s festivities, as well as for special occasions and fancy parties. You’ll find all the ingredients and detailed easy holiday dessert recipe directions (step by step) below. Champagne Raspberry Float

These boozy raspberry floats are a the perfect champagne cocktail for the holidays, particularly New Year's Eve!

Ingredients

  • 1 750mL bottle of VOVETI prosecco
  • 1 cup fresh raspberries
  • 1 pint real vanilla bean ice cream

Instructions

  1. Drop a few handful of fresh raspberries (approximately 3-4 berries per glass) into 6 clean champagne flutes. On top of the raspberries, add a small scoop of vanilla ice cream, followed by another layer of fresh raspberries (approximately 3-4 berries), followed by a final small scoop of vanilla ice cream.
  2. Fill each flute about 3/4 of the way full with VOVETI prosecco. The prosecco will produce quite a bit of foam, so wait until it’s settled, and then top off the glass.
  3. Serve immediately– and enjoy!

Notes

  • Great Tip: The more melted the ice cream, the better. Why? Because it's easier to scoop and because hardened ice cream will take longer to combine with the prosecco.

Start with a clean champagne flute.

Add a final small scoop of vanilla ice cream. Again, the more melted, the better. Why? Harder ice cream takes longer to mix with the prosecco.

Fill the glass with VOVETI prosecco. It’ll produce quite a bit of foam, so wait until it’s settled, and then top off the glass.
